Planetarian French Onion Dip

Yield: 2.5 cups

Recipe Notes

You can make a full batch of Caramelized Onions—you’ll be happy for the leftovers, which we’ve dubbed culinary gold—but the following is a half recipe—still a little more than you’ll need for this recipe.
Heat 3 tablespoons of olive oil in a large (12-inch) skillet. Add 2 large thinly sliced onions and cook, stirring often, until dramatically reduced and light caramel brown, 10 to 15 minutes. Reduce heat to medium-low; continue to cook onions, stirring frequently until rich caramel 20 to 30 minutes longer. (Cool to room temperature before adding them to the dip.)
