- 1 1/2 cups frozen corn
- 1/2 cup roasted red peppers, diced
- 2 tablespoons nutritional yeast
- Black pepper
Spinach, Sun-Dried Tomato Pesto, and Scallions
- 1 recipe A Pot of Flavorful Polenta using Sundried Tomato Pesto
- 1 pound frozen chopped spinach, thawed
- 1/2 cup scallions, thinly sliced
- 1 tablespoon nutritional yeast
- Black pepper
Pesto and Peas
- 1 recipe A Pot of Flavorful Polenta using Basil Pesto
- 1 1/2 cups frozen green peas
- 1/2 cup scallions, thinly sliced
- 2 tablespoons nutritional yeast
- Black pepper
Instructions
Corn and Roasted Red Pepper
- Follow recipe for A Pot of Flavorful Polenta, using pesto (your choice). Return pot to simmer and stir in 1 1/2 cups frozen corn kernels, 1/2 cup diced roasted red peppers, 2 tablespoons nutritional yeast, and several grinds of black pepper. Spoon into each of 4 bowls, garnishing, if you like, with a little extra pesto.
Spinach, Sun-Dried Tomato Pesto, and Scallions
- Follow recipe for A Pot of Flavorful Polenta, using Sun-Dried Tomato Pesto. Return pot to simmer and stir in 1 pound frozen, thawed chopped spinach, 1/2 cup thinly-sliced scallions, a tablespoon of nutritional yeast and several grinds of black pepper.
