Planetarian Tzatziki

Recipe Notes


  • 1 medium-large cucumber, grated (about 2 cups)
  • 1 can (13.5 oz) unsweetened coconut cream
  • 4 teaspoons lemon juice
  • 2 teaspoons each: red wine vinegar and minced fresh dill (dill is optional)
  • 1 large clove garlic
  • 1/4 teaspoon fine salt
  • Ground black pepper


  • Squeeze as much water as you can from the grated cucumber—you should have about 1 cup. Mix cucumber and remaining ingredients in a medium bowl with a sprinkling of salt and pepper. Taste, adjust seasonings, and serve. (Can be covered and refrigerated a couple of days.)
