Ingredients

  • 1 recipe Easy Potato Salad Base using white wine vinegar for drizzling
  • 1/2 cup mayonnaise, plant-based if possible
  • 2 tablespoons whole grain mustard
  • 2 tablespoons each: chopped fresh parsley and dill
  • 4 medium scallions, sliced thin
  • 3/4 cup each: sliced radishes and thawed frozen green peas
  • salt and ground black pepper

Instructions

  • Prepare Easy Potato Salad Base. While potatoes cook, mix mayonnaise, mustard, parsley, dill, and scallions in a small bowl. Add dressing, along with radishes and peas, to potatoes; toss to coat. Taste and adjust seasonings, including salt, pepper, and additional vinegar; toss again. Serve.
