Follow recipe for A Pot of Flavorful Polenta, using pesto (your choice). Return pot to simmer and stir in 1 1/2 cups frozen corn kernels, 1/2 cup diced roasted red peppers, 2 tablespoons nutritional yeast, and several grinds of black pepper. Spoon into each of 4 bowls, garnishing, if you like, with a little extra pesto.
