Ingredients

Corn and Roasted Red Pepper

  • 1 recipe A Pot of Flavorful Polenta using pesto (your choice)
  • 1 1/2 cups frozen corn
  • 1/2 cup roasted red peppers, diced
  • 2 tablespoons nutritional yeast
  • Black pepper

Instructions

Corn and Roasted Red Pepper

  • Follow recipe for A Pot of Flavorful Polenta, using pesto (your choice). Return pot to simmer and stir in 1 1/2 cups frozen corn kernels, 1/2 cup diced roasted red peppers, 2 tablespoons nutritional yeast, and several grinds of black pepper. Spoon into each of 4 bowls, garnishing, if you like, with a little extra pesto.

Spinach, Sun-Dried Tomato Pesto, and Scallions

  • Follow recipe for A Pot of Flavorful Polenta, using Sun-Dried Tomato Pesto. Return pot to simmer and stir in 1 pound frozen, thawed chopped spinach, 1/2 cup thinly-sliced scallions, a tablespoon of nutritional yeast and several grinds of black pepper.  Spoon into each of 4 bowls garnishing, if you like, with a little extra pesto.

Pesto and Peas

  • Follow recipe for A Pot of Flavorful Polenta, using Basil Pesto as the enrichment. Return pot to simmer and stir in 1 1/2 cup frozen green peas, 1/2 cup thinly sliced scallions, 2 tablespoons nutritional yeast, and several grinds of black pepper. Spoon into each of 4 bowls garnishing, if you like, with a little extra pesto.
