Lentil-Walnut Taco Mix

Description

Serve this filling in hard- or soft-shell tacos with the classic taco fixings—shredded lettuce or cabbage, minced red onion or scallions, sliced radishes, avocado, salsa, hot sauce, cilantro and, if you’re feeling it, something creamy. Leftovers are great in a taco salad (see Salsa Dressing)

Ingredients

  • 2 tablespoons olive oil
  • 1 medium-large onion, cut into small dice
  • 2 cups jarred salsa
  • 1 tablespoon chili powder (a chili spice blend, not pure chili powder!)
  • 2 teaspoons each: ground cumin and smoked paprika
  • 1 teaspoon oregano
  • 1/2 recipe Lentil-Walnut Mix Base (see below) (1/2 recipe is about 4 - 4 1/2 cups)

Instructions

  • Heat oil in a large skillet over medium-high heat. Add onions and sauté until translucent, 3 to 4 minutes. Add salsa and spices; cook until mixture thickens and darkens in color, 3 to 4 minutes. Stir in Lentil-Walnut Mix; cook to heat through a couple of minutes longer. Serve.
